The Raventós are one of oldest winemaking families in Catalonia, and they are deeply committed to biodynamic, dry-farm grape growing and winemaking. Such is the case with this Rosé, made at the Can Sumoi estate in the heart of DO Penedés. The estate dates all the way back to the 17th century!
The grapes for this wine were picked from dry-farmed vineyards grown over 1500 feet above sea level in limestone-rich soil with southern exposure. These vines were planted over 20 years ago, and some of them are 80 years old!
The grapes were de-stemmed then fermented on the skins for 4 hours in stainless steel. The skins were then removed and the juice continued to ferment on native yeast for 3 weeks. The wine then aged in stainless steel for 6 months before bottling, unfined and unfiltered.
