In its second year of production, GGT is fermented whole grape (in a sealed tank without oxygen, AKA carbonic fermentation), without extracting tannin and further texture from crushed grapes’ macerated skin, seed and pulp. The resulting wines show a lighter hue of red, and with far less tannin on the finish, are delicious served chilled (55 Fahrenheit or below).   

We love this technique as a vehicle to express the intensity of Santa Barbara County’s dry Sunshine with a more delicate touch. 

We aim to combine the straightforward red berry juice of carbonic Grenache, with the crunchiness of Gamay, and just a touch of savory Trousseau. While So Fresh wines are great out of the gate, the GGT will flesh out over its first year and continue to develop yummy secondary flavor through 2025. 

All So Fresh wines come adorned with labels written by Vineyard Manager Ruben Solorzano and if we saw this varietal combination on a label, we would have to buy it!

Hidden in the hills of California’s Central Coast, on a rare Limestone outcropping & unobstructed from the Pacific Ocean wind, this unique land is naturally suited to grow Syrah and Roussanne grapes. It’s all about the vineyard - which is why it is paramount to employ a highly skilled full-time workforce, La Cuadrilla. Take care of them, and they take the most precise care of the vines. In an era when the wine industry is moving towards mechanization, Stolpman Vineyards has gone in the opposite direction. Vines are only touched by the hands of La Cuadrilla, no tractors. They spare no effort in meticulous pruning cuts, vine training, and adjustments. 

With La Cuadrilla’s tenderly loved fruit coming into the winery, they can allow grapes to ferment with a gentle guiding hand. They favor naked fermentation with no inoculation, sulfur, or other additions. In many cases they choose not to crush the grapes, or they leave bunches whole – aiming for light, nuanced extraction. Fruit destined for red wine is foot trod and gently circulated to avoid coarse obstructive notes.

Fruity and bold with notes of crunchy strawberry, tart cherry with river rock, spice and blueberry. 

So, so, so fresh. That’s what this funky red blend is all about! Blending Grenache sourced from Stolpman’s estate vineyards with Gamay and Trousseau – we LOVE how silky and fun this wine is. Living and working in Los Olivos, our own Director of Product Jon McDaniel discovered Stolpman and spent a lot of time walking these vines. As Jon notes, “There is no one in Santa Barbara growing grapes and making wine as pure as Stolpman!”

Pairs well with summer BBQs, roasted chicken and spicy foods.
