That the buttery, creamy notes of Chardonnay come from a natural fermentation process called malolactic fermentation! Simply put, natural malic acid converts to lactic acid, the type of acid you find in milk, hence the buttery, creamy notes. This is a natural process that can be stopped by the winemaker simply by lowering the temperature of the tank!
