Sourced from three distinctive vineyards sites across California to add complexity and layers of flavor. Vine age ranges from 10-35 years old. All the grapes were picked at night to maximize freshness and acidity without needs of processing aids. Fermentation was done separately by vineyard in stainless-steel for 14-21 days before full malolactic fermentation was completed. Once fermentation completed, the wine was aged in both stainless-steel and French oak for 6 months before bottling under sustainable cork.
