2022 was the ultimate Clean-Crafted™ vintage for Gallivant Chardonnay! It was a very hot growing season where the acidity was quite low for Chardonnay. In "conventional winemaking", a winemaker would add a whole host of different acids and stabilizers to adjust the pH! We wanted to achieve a similar result - brighter acidity - but utilized blending of Colombard, known for its natural high acidity and vibrancy. That's the beauty of Clean-Crafted™ - because every vintage can be different, we hold to our standards to still produce spectacularly delicious wines!
