- Grapes were picked at night with meticulous sorting for the best berries in both vineyard and cellar before processing. Destemmed, pressed, fermented with native yeasts in stainless steel for 20 days.
- 50% aged in French oak for 5 months, remaining in stainless steel until transport for bottling under sustainable cork.
