- Initially fermented in stainless at 55°F, then transferred to neutral oak for 60 days of aging with light lees contact to build roundness and soften acidity. Full malolactic fermentation was not encouraged.
- Bottled unfiltered and unfined in lightweight glass with natural, sustainable corks.
